Tasting notes: Aromas of white flowers and citrus open on the nose, mellowing into the end-notes of beeswax and honey. On the palate it is full-bodied without being heavy and although there is minimal acidity, the fine mineral finish gives incredible freshness. It is a blend of Clairette, Ugni Blanc and Rolle whose vines grow on loamy clay-limestone soil. Yields are limited and the fruit is harvested by hand prior to direct pressing, 12 day fermentation and a 6 month vat fermentation.
